To make it fair, the iPhones were put at the same distance away from the object. The original iPhone and iPhone 3G had a fixed focus, it’s why their pictures are blurry.
Easily the biggest jump was from the 3G to the 3GS. But then the jump from the 4S to the 5 shows how much better the 5 is at colour reproduction and white balance.
